Layered Pancake Stack Recipe Recipe

  • 4 pancakes
  • 180 g spinach
  • 4 tablespoon marcarpone cheese
  • 1 onion, peeled and chopped
  • 1 clove garlic
  • 3 tomatoes, chopped
  • 1 red pepper, remove seeds and pith and chop
  • 2 courgettes, chopped
  • 1 tablespoon tomato purée
  • 30g cheddar, grated

Step by Step Instructions

  1. Cook spinach until wilted, squeeze and mix with marscapone.
  2. Cook onion, garlic, chopped tomatoes, red pepper and courgette until soft, add tomato purée.
  3. Lay pancake on baking tray and put half of the tomato mix on top and spread.
  4. Add another pancake and spread with the spinach mix.
  5. Put on another panacake and spread with the rest of the tomato mix.
  6. Place last pancake on top and sprinkle with cheese.
  7. Bake in a medium oven for 5 minutes.

Notes

Serve with salad.
