Recipe for Truita de Farina (Flour Omelette or Catalan Chapatti)

Ingredients

  • 8 eggs
  • 4 tablespoons of flour
  • 1 glass of milk
  • Olive oil salt and pepper

Method

In a bowl beat the eggs, add the milk followed by the flour which should be added a little at a time. Make sure the mixture remains a homogeneous consistency and smooth and free from lumps.

Add the salt and pepper and then leave for 20 minutes.

In a frying pan heat the olive oil , making sure it is well hot. Add the mixture and spread it around with a spoon. When one side is nicely browned toss it and do the same to the other side.

Serve hot. It goes down well with a cheese topping or a mushroom sauce. You could add herbs to the mixture or chopped green chillies with fresh coriander. Great to use as a kind of "chappati" with a curry sauce.

Notes:

This Catalan receipe is actually served as a first course and can be best followed by a salad.
