Recipe for Fresh Plum Cake

Ingredients
- 225g (8oz) self-raising flour
- 1 tsp ground cinnamon
- 100g (3.5oz) baking margarine
- 50g (2oz) sultanas
- 50g (2oz) soft brown sugar plus 2 tblsp for sprinkling
- 2 large eggs
- 4 tblsp golden syrup
- 225g (8oz) plums, stoned and chopped
Method
- Preheat oven to 160C/325F/Gas 3.
- Grease and line an 8 inch square baking tin.
- Rub the flour, half the cinnamon and the margarine together.
- Add the sultanas and 50g (2oz) brown sugar and stir.
- Beat eggs and syrup together in a separate bowl, add plums, then stir into flour mixture.
- Transfer to tin and level surface.
- Mix rest of brown sugar and cinnamon and sprinkle over top of cake mixture.
- Cook in centre of oven for 45-50 mins and then test. It should be risen and just firm to the touch when cooked.
- Cut into squares to eat.
Notes:
This is best eaten warm with ice cream though you can eat it cold, but why wait? Works just as well with apples and rhubarb, though plums work best I've found

I've not tried freezing a cake but I don't think it would work very well.

I am just about to make this cake and wont think twice about freezing it. I have frozen all sorts of cakes in the past and I think this will freeze fine.

Lovely recipe for plum cake. I have a glut of greengages at the allotment and have made lots of jam. Do you have a recipe for 'bottled' fruit, preferably incorporating alcohol? I think it would make a good Xmas present.

Don't make this cake unless you have a great deal of will power. Im about to make my third in a week! A great cake to share with friends over a cup of tea. Its seriously scrummy.

This cake is really good, and very easy to make! I tried it with rhubarb, and it was ok, but i found plums taste better than rhubarb. Overall, it's a yummy cake, and will definatly sell quickly at bake sales!

soft fruit tend to go soggy and pulpy when frozen , I usually put a piece of cake in the freezer for a week, try it, then make a decision

Your site is superb!! I just looked up RHUBARB & there you were! I've been making jam, chutney, pickles et al over 50 yrs. Now on crutches the 1st time EVER I've not made 3/4 lots marmalade ( & gutted!! ) I got into LIQUERS one year & have over 30 assorted in my pantry!! I planted a " mini orchard" but had old fruit trees already! My fresh PLUM cake is a little different to yours ( & it was in a leaflet the fresh food people put out in the 80's. ) I made a little cook book for a charity then!!

This cake is fantastic. I bake 2 at the same time, 1 to eat immediatley and 1 to freeze. The answer is yes, it does freeze really well – not quite as good at fresh, but still good.

Does the 8oz of plums include the weight of the stones? Sorry – bit of an amateur here!

Made this cake this afternoon (28.8.10) but in a loaf tin, so gave it a bit longer in the oven. Absolutely sublime! My family have ate the lot!

I am puzzled by 'baking margarine' in the recipe (stork brand maybe??) – would butter work as well please? I try to avoid processed fats you see… Thanks!

Well first attempt at this recipe and I used Damsons. Had to warm them to get stones out but apart from that followed recipe as instructed. Baked for an hour in pre-heated gas oven and still very moist – not wet or undercooked but bread pudding wet without the heaviness. Is it a moist one or is it because my fruit was more of a puree ?? Anyhow it is very nice not sweet will be smashing warm with ice cream or clotted cream or even custard I think – pudding for me more than cake yum yum thanks.

Yesterday picked 11lbs plums from my only tree (only a fraction of what is there) to make jam – thats on the go now but still have stacks of plums left, this was the first plum cake recipe I came to so have just made it and it's in the oven now, by the look of all the comments I shall be making another and another and another!!!

Loved the plum cake recipe. Had actually put excess Victoria Plums in freezer, defrosted and used in this recipe worked well. As for freezing the cake, would work but I dont think that is going to happen!!!

I was searching for a plum cake recipe to use up some of our (many) Victorias and came across this one. I can agree 100% with all the other reviewers in that it's absolutely gorgeous!! I left out the sultanas because I hate them and threw in a few more plums. I actually made three different plum cakes including two of these. One was eaten very quickly and the other went in the freezer. It soon came back out again though! I cut it into pieces before freezing and it was fine. We even defrosted it in the microwave then served it warm with cream fraiche. Scrumptious! It's definitely become a favourite in our house and we shall be making it regularly including trying it with apples so thanks!

I made this plum cake after doing an online search for a recipe to use up plums I had left in the fruit bowl. I didn't add sultanas as I didn't have any but instead added a chopped apple. The result was delicious! My "I dont like plums" household devoured it in a few hours!! So thanks very much for the fab recipe. I have to say the site is great too. Lots of good information.

Just made 1 cake and 12 muffins using double quantities. Cooked muffins for last 20mins worked really well. Substituted unsalted butter for margarine no probs

Brilliant cake. Made it with the green plums that we have to collect to lighten the tree and stop it breaking. Really yummy. Made two in the last few days. So quick and easy. Any other ideas for a trug full of green plums?

I loved mine, and I think I actually liked it best as a cold tray bake even though hot was good too. Just made a Dorset apple cake which is collapsing (very crumbly), so next time will use this recipe with apples as I know it works so well with plums. We live and learn!

Just taken this cake out of the oven. Looks and smells divine. Substituted 4oz of SR flour for ground almonds and added a scant half tspn baking powder. I'll post again when we've tried it…very soon!

This cake is brilliant – it disappears as soon as it is made. Even when I accidently left it in the oven for an extra 20min – it came out delicious and moist.
Unfortunately by the time I discovered the recipe I had stewed and frozen most of our glut of plums. Does anyone know of a good cake that can be made with rather runny stewed plums? Otherwise we are going to be eating lots of crumbles and pies this winter.
