Recipe for Oh No, Not Marrow Again?

Ingredients
- 1 large onion
- 1 medium marrow
- 6 fresh tomatoes OR 1 tin chopped tomatoes
- Handful mixed herbs eg: parsley, thyme, oregano, sage
- Olive oil
- Grated hard cheese eg Cheddar
Method
Peel onion. Chop onion finely. Place in large pan with a little olive oil and cook gently until soft.
Meanwhile, peel and de-seed marrow. Cut into large chunks. When onion is soft, add marrow to pan and cook for about 5 minutes.
Skin and deseed the tomatoes and add to the pan with the marrow (OR empty contents of tinned tomatoes to pan).
Wash and then chop the herbs. Add herbs to pan. Stir well and simmer for about 20 minutes or until marrow is tender but not soggy.
Transfer to a heat proof serving dish. Sprinkle grated cheese over the top and place under a preheated grill for 5 minutes to brown the cheese.
Serve with warm crusty rolls.
Notes:
This dish can be served as a vegetable side dish or as a meal in itself.

I don't have an allotment but I have won a huge box of veg in a raffle which included 2 marrows!
Made this today and served as a side with lamb – it was very tasty.
Made a couple of tweaks – mixed some crumbled stilton in with the chedder as well as a some breadcrumbs from a seeded loaf to add texture.

Harvested my first marrow from my newly aquired allotment yesterday and decided to give this recipe a try. The whole family enjoyed it which was a very motivating experience – they are not known for being diplomatic!
PS will be trying Netty's suggested tweaks to the recipe next time.

I " adore" marrow ( funny woman) & in & after the " war" my dad baked marrow with any veg we had " ie" lots of onions ( he sauted them first in butter? ) & my very favorite is with lots of cheese over the top! I add stale crumbled breadcrumbs to the cheese & back in to the oven , untill all golden & bubbling. I add fresh herbs too these days in with the onions ( they would burn if on top! )

The family have all asked for seconds after all saying that they don't like marrow, and have been asked to make some more soon.

Have made this twice – I love it. I also use breadcrumbs with the grated cheese. Any left overs I take to work and heat up for lunch.
