Recipe for Cucumber Mayonnaise

Ingredients
- 1/2 pint of home made or good quality shop mayo.
- 1/2 a Cucumber washed and chopped (leave skin on unless it's bitter).
- 10 washed capers.
- 1 tbls of lemon juice.
- 2tbls of fresh coriander leaf.
Method
Put all ingredients in a blender and process till smooth and green adding extra lemon juice if it's to thick. Season to taste.
Notes:
A cold sauce for white fish.
