Recipe for Savoury Swede Pudding

Ingredients

  • 1 lb Swede peeled, ? inch cubes
  • 1/2  cup fine white breadcrumbs
  • 3 tbsp milk
  • 2 tbsp bacon lard/fat (see recipe)
  • 6 slices streaky bacon
  • 1 tsp salt
  • 1 tsp sugar
  • 2 eggs, well beaten
  • Good pinch of ground ginger

Method

  1. Preheat the oven to medium
  2. Boil Swede in plenty of salted water 7-8 mins (till tender)
  3. Drain and cool
  4. While Swede is cooking, grill bacon till crispy 
  5. Drain bacon, cool then crumble, reserving 2 tbs or so of the bacon lard 
  6. Mash Swede thoroughly, and then add all the other ingredients including lard 
  7. Put into a 2 qt casserole and bake for 1 hour. 
  8. Finish with a sprinkling of ground  ginger (cinnamon can be used )

Notes:

Puddings have been a staple of English cuisine for hundreds of years. It’s only recently that the term has come to mean sweet.
