This is a fab soup, we have been using this recipe for a couple of years now and always love it. I've just made it with marrow - well an over-size courgette, peeled the tough skin away, used just parsley for herbs as we have loads, and it was still great. Thanks for the original recipe :)

I've just finished making this soup. It was incredibly easy to make and as we have a huge amount of courgettes growing recipes are always welcome. Next I will be making a Courgette tomato and cheese gratin for this evenings meal.
The soup is now cooling on the stove, when cold I will freeze it. I've not yet added the cheese I will continue from step seven when I defrost and re-heat it. Thanks for the recipe.

I made a triple batch yesterday after reading all the positive comments and we have not been disappointed! This tastes superb, we used creme fraiche and cheddar since that's what was in the fridge, and it was lovely. The rest of the courgettes (I did have 17 of the things in the fridge) have gone into the chocolate courgette cake which is equally delicious (if not quite as healthy!). Thank you very much for this.

This is the best courgette soup recipe I have found. Had loads of courgettes last year so froze quite a lot of them and found this is the best way to use up frozen courgettes.

Hi, I fancy trying this especially after all the positive comments - do the courgettes have to be peeled/skinned first?
