Courgette Soup Recipe

Ingredients:

  • 2 lbs (900 g) courgettes
  • ½ lb (225 g) potatoes
  • 2 cloves garlic
  • 1 onion
  • 1½  pints (900 ml) water or white vegetable stock
  • Salt and Pepper
  • 1 tablespoon chopped basil
  • 1 tablespoon chopped oregano
  • 1 tablesepoon chopped chives
  • 2 tablespoons olive oil
  • 2 oz (56 g) grated parmesan cheese
  • 2 tablespoons cream

Method:

  1. Wash the courgettes and chop into chunks. Peel and cut the potatoes into small cubes.
  2. Peel and slice the onion. Crush the garlic.
  3. Heat the olive oil in a large pan and add the onion and garlic. Lightly fry for about 5 minutes to soften.
  4. Add the potatoes to the pan, cover with half of the stock or water, bring to the boil and then reduce to a simmer for about 15 minutes until half-cooked..
  5. Add the courgette chunks, salt and pepper to taste, chopped oregano and basil and the rest of the stock or water, bring to the boil and then reduce to a simmer for 10 minutes, stirring occasionally, until the potatoes are fully cooked.
  6. Either rub through a sieve or put through a blender to make a smooth pureee.
  7. Return to a clean pan, re-heat and add the cream, grated parmesan and chopped chives without boiling.
  8. Serve immediately with a sprinkling of cheese on the top of the bowls.

What a great site, didn't know what to do with the tons of courgettes I was geting from the allotment. The courgette cake is absolutely superb suggest everyone makes one thank you

The courgette and potato soup was so easy to make and tasted absolutely superb. As new allotment holders it's been great to reap the rewards and produce a meal made (almost – haven't quite got round to cheese or creme freche yet) entirely from our own crops. Thank you!

Have been searching for receipes to use up the glut of courgettes and have just made this one. Delicious, really delicious. Tasted good even without the parmesan cheese and chives. One question is it basil or parsley as the ingredient list and instructions differ?

It's really a matter of taste – I'd use basil and have amended the recipe to reflect this.

found this on the net as this was one of the easiest recipies i found. without all the faffing and the use of stock….made it in about half an hour with a great smell in the kitchen followed by a great taste – even the wife liked it.
the only thing was when i reheated the left over the next day the cream felt sort of curdled, so in future if im making any for the next day i'll leave out the cream until i need it ……..

This delicious recipe is similar to one very popular in France as the classic family supper; but instead of adding cheese in the cooking each member of the family adds her/his segment of "La Vache Qui Rit" (Laughing Cow) – the equivalent of Dailylea which is a lovely part of the ritual!

Tried this recipe last night and I have to say that it must be one of the best soup recipes I've ever made, even my husband liked it!!!! I used mascarpone instead of cream, only because I had it in the fridge. Thanks, great site.
