- 1 small free-range chicken
- 1 or 2 bay leaves
- 2 or three sprigs of thyme
- Salt and pepper
- 1 lb (450 g) leeks
- 2 oz (56 g|) long grain rice
- 2 tablespoons chopped parsley
- 2 pints (1.1 litres) water

- Bring to the boil, cover the pan, reduce the heat and simmer gently for about 1 hour.
- Remove the chicken from the pan. Add the sliced leeks and rice and continue to simmer, covered, for 15 minutes.
- Skin the chicken and cut the meat from the bones. Coarsely chop the chicken meat.
- Remove the bay leaves from the pan and add the chicken meat along with the chopped parsley.
- Simmer for about 5 minutes more and adjust the seasoning.
Serve hot.. For a richer soup, add 4 oz (112 g) of stoned prunes at the beginning.
