Recipe for Savoury Leek Cake

Ingredients

  • 2 Large Leeks, thickly sliced. (1/4 inch)
  • 2 large Potatoes, thickly sliced (1/4 inch)
  • 1 large onion thinly sliced.
  • 1/2 pint beef stock.
  • Salt & pepper to taste.
  • 1/2 cup of melted butter/marg.

Method

  1. Layer the leeks with the onion & potatoes with seasoning  in a cake tin.
  2. Pour in the stock and cover with tin foil.
  3. Bake in a medium oven for 40 mins and then remove the foil.
  4. Paint with butter or margerine.
  5. Return to the oven for 10 mins until golden, and serve.
