Recipe for Welsh Fried Leek Rings

Ingredients

  • 1 very large juicy leek sliced very thinly
  • 1/2  pint of milk.
  • 1/2  lb Self Raising Flour.
  • 1 tsp each of salt & pepper.
  • 1 tsp dried rubbed sage.
  • 1/2 pt, Nut oil, heated to frying temp.

Method

  1. Separate leek rings and soak rings in the milk.
  2. Place flour, salt, pepper & sage into a plastic bag.
  3. Remove leek rings from milk and place in bag with flour and shake till coated.
  4. Remove rings and fry in the hot nut oil in small batches & drain on kitchen paper.

Notes:

Goes well served on top of any grilled or poached white fish.
