Sweetcorn Pudding Recipe

Ingredients:

  • 12 oz (338 g) sweetcorn kernels (you'll need to blanch these if fresh)
  • 2 teaspoons cornflour
  • Salt and black pepper
  • 2 eggs
  • ½ pint (285 ml) full or semi-skimmed milk
  • 1½ tablespoons butter
  • 1 teaspoon sugar (optional – depends on how sweet the sweetcorn is)

Method:

  1. Melt the butter in a large pan and then pour in the milk. Lightly beat the eggs and stir into the milk. Mix well.
  2. Mix the sweetcorn with the remaining ingredients and stir into the egg/milk mix.
  3. Pour into a greased casserole dish and bake in the middle of a pre-heated oven at Gas Mark 4 (350°C/180°F) for about 50 minutes.

Serves 4.

Note: Comes out like a savoury egg custard.
