Sweetcorn Pudding Recipe
Ingredients:
- 12 oz (338 g) sweetcorn kernels (you'll need to blanch these if fresh)
- 2 teaspoons cornflour
- Salt and black pepper
- 2 eggs
- ½ pint (285 ml) full or semi-skimmed milk
- 1½ tablespoons butter
- 1 teaspoon sugar (optional – depends on how sweet the sweetcorn is)
Method:
- Melt the butter in a large pan and then pour in the milk. Lightly beat the eggs and stir into the milk. Mix well.
- Mix the sweetcorn with the remaining ingredients and stir into the egg/milk mix.
- Pour into a greased casserole dish and bake in the middle of a pre-heated oven at Gas Mark 4 (350°C/180°F) for about 50 minutes.
Serves 4.
Note: Comes out like a savoury egg custard.
