Tarragon Vinegar Recipe
Ingredients:
- Tarragon leaves, washed, drained and roughly chopped (about 3 good handfuls)
- 1 pint (570 ml) white wine vinegar or distilled white malt vinegar
Method:
- Put the tarragon into a wide-mouthed sterilized jar and pour over the cold vinegar.
- Cover tightly and leave to stand in a sunny place for 3 to 4 weeks, shaking occasionally.
- Strain through muslin, pour into a sterilized bottle, adding a fresh spray of tarragon to the bottle, and seal.
Makes about 1 pint (570 ml) of Tarragon Vinegar.

Make sure you use FRENCH Tarragon and not the horrible RUSSIAN Tarragon commonly sold as seed and plants. When buying a FRENCH Tarragon plant make sure you pick a leaf and have a nibble to confirm its FRENCH…..
You will never get FRENCH Tarragon as seed. French T spreads by rhizomes a bit like mint so its very easy to propogate by just pulling up a root, surprisingly it also strikes very easily from cuttings. Remember FRENCH T is slightly tender so will need winter protection, best grown in biggish pots and moved into a greenhouse or protected area. Mine survived last winter just in a cold greenhouse.
