Recipe for Yogurt and Coriander Dip (for Asparagus)

Ingredients

  • 1 Cup Greek style yogurt.
  •  1/2 Cup each of good mayo & whipping cream.
  • Zest & juice of 1? limes (or 1 lemon +  tea spoon of caster sugar).
  • 1/2 Cup each of chopped freash parsley & coriander.
  • 1 and a half Table spoons of good olive oil.
  • 1 Tablel spoon finely chopped green olives (optional)
  • Salt & pepper to taste.

Method

Whisk together all ingredients & chill for 1 hour + then correct seasoning. (mixture can be thinned by adding more juice)

Notes:

Serve with the Barbecued Asparagus dish, also from Granny Dumplin
