I used a mixture of green and yellow courgettes, Benecol instead of butter and Rose's lemon and lime marmalade, gave it a bit of a tang. This has been the nicest cake I have baked using our glut of courgettes. I have made 2 in as many days, hopefully todays effort will make it to the freezer! A lovely moist cake.
