Courgette Soup Recipe

Have been using my courgettes up on this soup as it freezes well. It is very filling and very creamy - so watch the waistline! The orginal recipe came from my neighbour and I added the onions and potatoes to make it more filling, but you could leave these out if you wish.
Ingredients:
- 2 lb courgettes
- 4 medium potatoes
- 2 medium onions
- 4 pints veg stock
- salt and pepper to taste
- one or two tubs of boursin (or equivalent)
Method:
- Slice courgettes, peel and cube potatoes, peel and chop onions. Add all ingredients (not the boursin) into a very large pan and simmer for about 20-25 mins or until the veg are tender.
- Put into a liquidiser and puree.
- Return to pan and add the boursin stiring until completely dissolved into the soup – depending on how creamy you like your soup depends on whether you use one or two.
This freezes really well.
Serves 6 (or 12 if you like small bowls as it is very creamy)

would anybody know whether this soup can be made in large quantities and frozen (without the cream I guess)?

If you leave out the boursin this should freeze.I'm assuming that is what Pauline means when she says it freezes really well.

What a wonderful soup. I used only 2 1/2 pints of vegetable stock and it was perfect. Please please Val, a book on soups would be perfect to bring out in time for the Winter.

I have been making a version of this wonderful soup for years without the potato but with only 1 150g packet of Boursin and with ½ pint of milk. It freezes with the Boursin cooked into it.
This freezes exceptionally well and is a wonderful way of using your glut of courgettes especially the huge ones that lurk beneath the leaves and get missed when you are picking.
