Stuffed Peppers Recipe
Ingredients:
- 4 large green peppers
- 1 medium onion, chopped
- 2 cloves of garlic, crushed
- 4 ozs (112g) long-grain rice, cooked
- 8 ozs (225g) tomatoes, chopped
- 2 sprigs of parsley, chopped finely
- 4 ozs cheddar cheese, grated
- 2 ozs (56g) butter
- 1 tablespoon olive oil
- Salt and pepper
Method
- Cut a slice off the top of each pepper, remove centre core and seeds.
- Brush each pepper on the outside with the olive oil and then stand the peppers upright in an ovenproof dish.
- Melt the butter in a saucepan and fry the chopped onion gently. Add the tomatoes, rice, parsley, salt and pepper and combine.
- Pile the mixture into the pepper shells.
- Top each pepper with grated cheese.
- Bake for 30-40 minutes in a pre-heated oven at Gas Mark 4 (350°F/180°C) until the peppers are tender. Serve hot.
Serves 4
Note: Chopped mushrooms can replace some of the tomatoes in the mixture and the addition of a beaten egg will give a firmer filling.

I tried the stuffed pepper recipe and loved it. I tried it on my bf and he not only commented on it being the best meal he'd had in a while, that it was the most original he'd had. I give this meal a biiiiiiiiiig thumbs up!

I cooked a meal for me and my gf the other night but it felt like I put no effort in it at all We have had this before in restaurants but now I'm going to make it from scratch for her. More effort for a starter, then find a main course. I already have a dessert her fav!!

Seen this Stuffed Pepper for years even Encore Family Dinners make them. But now that we don't eat meat my boyfriend and I I had to search out and make them myself. I only changed the tomatoes to a fired eggplant and sauce mix. But keep everything the same. I did boil my peppers for 5 mins to remove all the oils from them that they get in the shipping to the market. But OMG. I add cheese in the mix as well on top. It's to die for. Hey… The recipe is amazing thanks. One thing i would add though is a bit of tumeric to the rice as it gives it more colour and flavour. Thanks again for the recipe

I've just made this for my family and it was excellent .
Next time I think I'll put the cheese and rice in layers.

@ Hannah if you add the beaten egg the filling should stay in, I made it for my children and they ate it all up!
