Hot Potato and Asparagus Salad Recipe

Dressing:
- 3tbs Mayo
- 1 tsp Wholegrain Mustard
- 2 Cornichons (or small gerkins) sliced
- 1 tsp chopped dill
Salad:
- New Potaoes -sliced
- Asparagus – cut into approx 2" lengths
- Peas
- Rocket leaves
Method:
Mix dressing ingredients together. Steam veg until tender, place rocket on plate top with veg and dollop on a good spoon of dressing.
Great with fresh crusty bread.
