Recipe for Roasted Cherry Tomatoes

Ingredients:

  • Cherry tomatoes
  • Olive oil
  • Handful of garlic cloves
  • Peeled dried chilli flakes (if liked)
  • Dried oregano & basil
  • Salt & pepper

Method:

Get your oven really hot - about 220C

Put a handful of cherry tomatoes and the garlic in a bowl with a pinch of dried chilli, oregano and basil (dried herbs give more flavour than fresh), as much salt and pepper as you like, and swirl around with a good glug of olive oil.

Roast in a shallow tin/tray (so that it’s all in a single layer) until the tomatoes are beginning to blacken a bit - half to three quarters of an hour or so.

This is great stirred into pasta, on a pizza, or just eaten with a spoon

Try squishing then a bit with a fork and spreading on bread, or allowing to cool and mixing with some cream cheese for a sarnie filling or in jacket spuds.
